It’s a wonderful sweet & savory stew. A pure comfort of potatoes, pumpkin, carrots and some other colorful vegetables which give joy to the dish. Perfect for cool days!

Ingredients
– 1 medium onion in cubes
– ¼ green paprika and ¼ red paprika in cubes
– 1 grated carrot
– minced garlic
– 1/2 small spoon sweet paprika powder
– 1 cup cochayuyo cooked and in small pieces (around 12grs dried).
– olive oil to sauté
– 2 potatoes in cubes
– ¾ cup pumpkin in cubes
– 1 soup spoon rice
– 1 small spoon oregano herb
– 1 small spoon basil
– ½ small spoon cumin
– pepper and salt
– about 0,8lt. Vegetable broth or water.
– 2 cup of frozen mix vegetables (cubes carrot, green bean pieces, peas and corn)
– fresh parsley and chili flackes to garnish

Preparation
1.- Sauté the onions, green and red paprika, grated carrot and garlic in olive oil until soft.
2.- Add salt, pepper, sweet paprika powder, oregano, cumin and basil. Stir.
3.- Add cooked cochayuyo, stir and continue a pair of minutes cooking.
4.- Add the patatoes, pumpkin, rice and stir, add broth or water and cook for about 20min. or till vegetables are tender.
5.- Between the last 7min. add the frozen vegetables.

To serve, ladle into deep bowls with ample room for the seaweed, vegetables, and the delicious broth. Garnish with parsley, chili flakes and serve with crusty bread.

Cooking Time: 30 min
Serving: 3-4 Person

Tips: – Can be prepared with any other seaweed of your preference (just follow seaweed packaging instruction).
– How to prepare cooked cochayuyo?:
1.- Just hydrate small pieces of cochayuyo around 30min. in water.
2.- Lightly rinse in water the hydrated cochayuyo and cook for 15-20min. with fresh water and 1 spoon of vinegar (Piece of Ginger or lemon) till tender.
3.- Rinse it again and ready to use in recipe.
